Elizabeth Mary Pollack, known fondly by all as Betty, passed away peacefully on December 3, 2025, at the age of 84. She spent her final moments surrounded by the love of her family at the home of her son, David. She was a woman of profound strength and fierce loyalty whose life was anchored by her unwavering devotion to her family.
Born and raised in Baltimore, Maryland, Betty’s life took a beautiful turn when she was set up on a blind date by her best friend with Michael "Mike" Pollack. They were married on October 31, 1970, and in 1980, they moved to Texas, settling in Hurst to raise their family and build their lives together.
Betty was a "silent champion" for those she loved. While she wasn't always vocal, her strength was felt in her constant presence and her protective spirit. She believed that love was a verb, demonstrated through sacrifice. This was never more evident than when her mother, Elizabeth Sopel, could no longer care for herself due to dementia; without a second thought, Betty moved back to Baltimore to help her sister care for their mother, providing comfort and dignity until her mother’s passing.
Betty’s own resilience was equally unmatched. Following a stroke in 2023, she faced a difficult road to recovery. She never gave up, moving forward with a new outlook on life and proving that her spirit could not be broken. She taught her family the true meaning of quiet courage.
Betty is survived by her son, David Pollack, and his wife, Mary Pollack; her daughter, Lori Kircher, and her husband, Brian Kircher; and her youngest sister, Barbara Callahan. She was the proud grandmother of Tori Clements, Tristan Grady, and Zia Kircher, and the cherished great-grandmother of Willow and Ellie Clements. She was preceded in death by her beloved husband, Michael Pollack; her mother, Elizabeth Sopel; her father, Anthony Sopel; her older sister, Bernadine Klugel; and her brother, Anthony Sopel Jr.
A Catholic Funeral Mass will be held in her honor at 9:00 a.m. on Saturday, January 10, 2026, at St. John the Apostle Catholic Church, 7341 Glenview Dr, North Richland Hills, TX 76180. A faithful member of the parish for over 40 years who attended Saturday Mass most of her life, this will be Betty’s final Mass at her beloved church. While flowers are welcome, those who wish to further honor Betty’s love for cats may make an optional donation in her name to a local animal shelter or animal rescue. All friends, neighbors, and those whose lives were touched by Betty are more than welcome to attend and celebrate her life with her family.
